We tried out Bobby Flay's recipethe last time we had friends in town and the pancakes were a huge hit. The batter resulted in fluffy, tangy, little cakes and the compote was to die for (probably really good on biscuits and cornbread too).
Although there are a lot of ingredients, the recipe is actually really easy to execute. Not all the components are necessary. For instance, I skipped the maple syrup (completely unnecessary in light of the compote) and substituted fresh whipped cream for the ricotta, and was very pleased with the results. Also, if your blueberries are pretty ripe, I would recommend halving the amount of sugar in the compote.
We also doubled the vanilla in the batter (kudos to my friend) and served the pancakes with honey butter (room temperature butter whipped with honey).
